The story of Bushmills started back in 1608 when they were given a license to distil and in 1784 the old Bushmills distillery is made official. The late 18<sup>th</sup> century was when bushmills started to be recognised as a great whisky winning numbers awards. After the World War II, it was the gold era for Bushmills as they became increasingly popular especially in the U.S. In 2008 Bushmills celebrated their 400<sup>th</sup> birthday and the bank of Ireland put them on their bank notes. The year 2011 and still they are growing in popularity with Bon Iver, Elijah Wood and Chromeo all becoming ambassadors for the brand.

The process used to make Bushmills all starts from malt barley, and is grinded into mash and then mixed with hot water to make wort. Then yeast is added to the wort, and it is fermented into an alcoholic substance at around 8% ABV called the wash. Now it is time for the distillation, the wash is boiled to distil the alcohol from the water and it is tripled distilled then matured in oak barrels. The barrels used range from American Oak, Spanish Sherry, Port, Madeira or rum barrels. They are left to mature for either five, ten, fifteen or even more years. Next step is blending the whiskies, so several different malt whiskies are selected then blended together to find the right flavour. The final process is bottling, which also takes place at the Bushmills distillery, which is rare as they are one of the only distilleries in the world that bottles their own whisky to ensure quality is maintained.

Produced in Strathisla Scotland in the highlands, it was in 1801 when the Chivas brothers open their first shop were they sold gourmet food and drink from around the world to Europe elite. They soon gained a reputation of supplier for good and malt whiskeys.

In 1843, James and John Chivas were awards by Queen Victoria to supply goods to the royal house.

It wasn’t until the 1850’s that they saw an opportunity to create a style of whiskey using combining soft grain Whiskey and robust single malts to create balanced and smooth blend scotch whiskies.

In 1909 the Chivas brother’s whiskey was in high demand, but then prohibition hit and the whiskey went out of production, making their 25 year old blend become a rare collector’s item.

In the 1950’s the 12 year old Chivas Regal blend was introduced to America and won their hearts over night.

In 1997 master blender Colin Scott created the multi award winning new blend; Chivas Regal 18yo gold signature blend. Each whiskey used in this blend has been aged for 18years creating a deep complex and exceptionally rich blend.

In 2001 Chivas Regal was bought by the Pernod Ricard group but they kept master blender Colin Scott to keep the quality of the blend and exceptional taste.

In 2007 the 25yo blend came back into production.

Jack Daniel's Tennessee whiskey No.7 is made at the Jack Daniel Distillery in Lynchburg, Tennessee, using pure cave spring water and a unique mellowing process perfected by Jack Daniel in 1866. This undergoes a filtration to mellow the whiskey drop by drop through ten feet of sugar maple charcoal (known as the Lincoln County Process). The reason behind this is the distinct smoothness it generates making it a whiskey not bourbon. It refines the whiskey’s rich flavour before it has even had a chance to mature in their custom made barrels. To make the barrels they use white oaks for the barrel staves and char the inside to caramelise the wood with its own natural sugar. It is from this that the whiskey gets its amber colour, distinct flavour and finish. The water used is from a cave near the distillery that flows all year round at a rate of 800 gallons per minute at a constant temperature and is virtually iron free. It has a sweet taste with a hint of dry spice and oily nuts, perfect to drink neat or to add to cocktails. No.7 has won countless awards since 1904, this was his first competition where he won a gold medal for the worlds best whiskey.

Aged four to six years, the distinctive pungent nose and powerful flavour of Jack Daniel's have made it a favourite around the world; and although some find it too assertive, there can be no denying its quality. Mr.Daniel's promise that 'Every day we make it, we'll make it the best we can' is perpetuated to this day with an almost religious devotion.

Johnnie walker platinum blend has just been released to the market and added to Diageo’s Johnnie Walker range. It fits perfectly in between the gold label and icon blue label and is inspired by a long Scottish family tradition of using private blends to create this exclusive whisky, exclusive because it was only tasted by a select few individual for special occasions. This seems relevant due to the name given to this blend, ‘Platinum’ which is one of the most precious, refined and elegant metals on the planet.

It has also been given a new bottle design, which is odd for Johnnie Walker as the bottle design for their labels is legendary. However the new bottle does look appealing, it is still the usual rectangle shape but with a special finish, the bottle of the bottle is thicker and stronger with an elegantly edged facet giving the whisky a modern and expressive character.

The blend is 18years old and matured in American oak casks. The flavour is typically sweet and elegant of traditional Speyside whisky associated with a subtle smoky note. You sense aromas of dried fruits, malt, sweet vanilla and fruity mandarin to round out the whisky. This whisky is best enjoyed on the rocks so that the round body of the whisky can fully develop but many say it is just as good drunk neat.
